So today is Sunday, finally a day of rest. I found great difficulty trying to type on the iPad so I finally switched to the laptop. I'm also finding difficutly in trying to write my first blog while watching the NBA Finals Game 3, Mavs vs. Heat. As of now, the Mavs just tied up with the Heat.
I started off my lazy Sunday by waking up late, 10 am. I was starving and didn't want to feel guilty about what I ate, so I went with oatmeal. I used the quick oats, cut up a granny-smith apple in tiny squares, set 1/4 cup of raisins aside and used about 2 tbsp of brown sugar. Overall, pretty darn good! Beat's McDonald's oatmeal any day. My bf and I then procedeed to do our grocery shopping and no shopping trip is complete without picking up some OJ & Champagne. We went home and needless to say, we drank the whole bottle in our fancy champagne glasses. After my mimosa stupor, I decided I needed a snack or some lunch.
Lunch: for lunch I had some baba ganoush, very tasty. I found some olives in the pantry, cut them up and placed them on top of the baba ganoush and garnished it with paprika and some olive oil and enjoyed my dip with pita chips.
Dinner: I have been hankering for some real Mexican food for over a week! I took 2 lb of pork, cut them into 2 in squares and boiled them til tender for about 1 hour. I soaked pinto beans for 3 hrs or so and boiled them for about 1 1/2 hrs. While the beans and meat boiled, I prepped everything for Mexican red rice. After the meat was tender, I took it out and strained it. I then heated a saucepan, used 1 tbsp of lard and then added some OJ and milk and then meat to the pan. The OJ & milk eventually cooked off, leaving the tender juicy meat to brown. I finished my beans by adding some salt & jalapenos. The best part of the dinner was the Mexican rice! De-leech-ious! Probably my best one yet, but I hate to brag. :-P
Being a blog newbie, my intentions for this blog is to update y'all (I'm from TX) on what I cook daily and provide a some general guidance, as far as cooking goes. Cheers!
